Coconut Chia Puddings
Ingredients
3 cups unsweetened coconut water
1 cup chia seeds
1 tablespoon vanilla bean paste
Toppings
Fresh berries or chopped fruit
Unsweetened coconut yoghurt
Unsweetened coconut flakes
Chopped nuts of choice
Instructions
In a medium sized bowl, combine the coconut water, chia seeds and vanilla bean paste and stir well. Cover the bowl in wrap and put in the fridge overnight or pour the mixture into glasses and refrigerate overnight. Top with fresh berries or fruit of choice, a dollop of coconut yoghurt, coconut flakes and chopped nuts! Yum!
