Creamy Turmeric Lentil Soup (easy, soothing and energy-supporting)

Ingredients

1 cup red lentils

1 medium carrot (diced)

1 small red onion (chopped)

2 cloves garlic (minced)

1 tsp turmeric

1 tsp grated fresh ginger

4 cups organic vegetable broth

1 tbsp extra virgin olive oil (EVOO)

Salt & pepper to taste

Squeeze of lemon juice

Fresh coriander for serving.

Optional: 1/4–1/2 cup coconut milk for extra creaminess.

Method

Sauté onion and carrot in EVOO until soft. Add garlic, ginger, turmeric; cook for 1 minute. Stir in lentils and broth; simmer 20–25 minutes until lentils are tender. Blend to a creamy texture if desired. Finish with lemon juice, salt/pepper, and coriander. Add a swirl of organic coconut milk or cream if you feel like extra creaminess.
